1 cauliflower
1 Spanish onion, finely chopped
2 cloves garlic, finely chopped
3 tablespoons olive oil
2 tablespoons butter
6 tomatoes, peeled and diced, or 1 tin Italian peeled tomatoes
2 tablespoons finely-chopped parsley
Salt and freshly-ground black pepper
1 tablespoon breadcrumbs
Prepare and cook cauliflower in flowerets for about 5 minutes. Saute onion and garlic until transparent in olive oil and butter. Add diced peeled tomatoes or tinned tomatoes, and 2 tablespoons finely-chopped parsley. Season with salt and freshly-ground pepper. Add cooked flowerets and breadcrumbs and simmer for a further 10 minutes, or until tender.
