A cucumber
A few chives
Small cupful cream
A teaspoon of sugar
Olive oil
Salt, pepper
A teaspoon tarragon vinegar
Slice the pared cucumber very thin. Sprinkle coarse salt over the cucumber and leave in a colander to drain for ½ hour. Rinse to get rid of excess salt, if necessary. Drain them well.
For the dressing, mix the sugar and vinegar together, then add the cream, pepper and salt. Add about 2 tablespoons of olive oil and the chopped chives, and pour the dressing over the cucumber in a shallow dish.
