Fruit part:
1 lb. fresh apricots
4 oz. sugar
Little grated lemon rind
Topping:
4 oz. brown sugar
4 oz. flour
Pinch of salt
2 oz. soft margarine (or butter)
Halve the apricots (remove stones), mix with sugar and put into greased casserole dish. Sprinkle grated lemon rind on top. Make the topping by mixing sugar, flour and salt together thoroughly; rub in soft margarine. Sprinkle crumb mixture evenly over the fruit. Oven 375° F for 1-1½ hours.
Crumbles can be made along the same lines with apples, with rhubarb (my favourite) and with plums.
