1 lb. apples, peeled, cored and sliced
½ oz. butter
Grated rind of ½ lemon
1 clove
Sugar to taste
Put all the ingredients in a covered pan. Stew gently till tender. Cooking in an oven is the better way, but if cooked on the top of the cooker, stir occasionally to prevent burning. Sieve, or beat to a pulp, and serve with pork, roast duck.
