2 lb. cooking apples
8 oz. onions
3 lb. blackberries
1 lb. brown sugar
3 oz. sait (coarse salt or sea-salt)
1 pint vinegar (best malt or wine)
1 teaspoon powdered mace
1 teaspoon cayenne pepper
1 teaspoon dry mustard
1 teaspoon ground ginger
2 teaspoon powdered cloves
Peel onions and apples, cut up roughly. Pick over and wash berries. Put everything except sugar into a large pan. Simmer 1 hour, then add sugar, stirring until dissolved. Cook until reduced to a pulp, stirring often. Rub through a sieve with a wooden spoon. Put in jars. Tie down when cold. Delicious.
