FOREWORD

This cookbook is for my family who from time to time ask for the recipes of dishes they have enjoyed at Tanza and Wootton over the years. In it you can trace the progress of the family cuisine from the basement kitchen at Tanza (the era of macaroni cheese, fish pie and mince collops) via the ground floor kitchen-dining room (with which I associate particularly red cabbage, veal marengo, peasant girl with veil and strawberry shortcake), to the top floor kitchen of 31A and the gift of many marvellous cookbooks which resulted in some memorable meals there.

Various other influences are to be found in the cookbook - the scottish, my addiction to Christmas, the long holiday Malcolm, Kathy and I spent in Corsica, and Wootton with its supply of superb raw material for good meals. As well as being evocative I hope this collection of recipes will be useful.
