Wash kippers and remove heads. Arrange in pairs, face to face, with a small pat of butter between each pair. Place in frying pan with a further pat of butter beneath each pair; cover pan and cook for about 5 minutes or so.
Uncover pan, turn pairs of kippers over so that top kipper becomes the bottom one, re-cover and cook a further 5 minutes or until succulent and ready.
For a delicious lunch serve with fresh brown bread and butter and a pot of tea.
