2 whites of eggs
2 oz. granulated sugar
2 oz. castor sugar
Lightly grease a baking sheet. Whisk egg whites until stiff and dry. Add the granulated sugar and continue whisking until stiff again. Sprinkle castor sugar over the surface and, using the same whisk, stir in lightly by hand. Shape the meringues using two dessertspoons. Dip the spoon in cold water and shake off excess drops. Take a spoonful of the mixture, shape by scooping from one spoon to the other, and then onto the baking sheet.
Bake in a very slow oven (200° F) until meringues are firm and crisp. They should remain white and baking may take 3 hours or more.
